Proper Sandos by Kishi is a pop-up concept by twin chefs Haru and Gohei Kishi at the Austin Proper Hotel, centered around Japanese milk bread sandwiches shaped by their Japanese and French backgrounds. The identity leans into clarity and restraint, allowing the concept to feel focused and self-assured while reflecting the chefs’ distinct point of view.
